Barista serving an iced coffee sweetened with ube syrup

This ube syrup recipe turns real ube into a sweet, purple coffee syrup you can keep in the fridge. Add a spoonful to lattes, cold brew, cold foam, milk tea or cocktails.

Why make your own ube coffee syrup?

Most store-bought ube syrups are flavorings with added color. With Kapsoo ube powder, your syrup is made from real purple yam, with a clean ingredient list and a natural lavender color.

How to use ube syrup

Use 1–2 tbsp per 12 oz drink. Try it in an ube latte, over ube cold foam, in ube milk tea or in an ube cocktail.

Instructions

  1. Step 1

In a small saucepan, whisk the water, sugar, ube powder and salt until no lumps remain.

  2. Step 2

Bring to a gentle simmer over medium heat, stirring, and simmer for 5 minutes until the sugar is dissolved and the syrup is slightly thickened.

  3. Step 3

Take off the heat and stir in the vanilla.

  4. Step 4

Let cool completely, then pour into a clean bottle or jar and refrigerate.

Tips & variations

  • Shake before each use — some ube may settle at the bottom.
  • Keeps up to 2 weeks in the fridge.
  • Swap half the sugar for brown sugar for a caramel note.
