How to cook with ube powder

Ube powder is dried, finely milled purple yam. It keeps for months in the pantry and gives you real ube flavor and color in seconds. New to ube? Start with our guide: what is ube?

Always make a paste first

For drinks and creams, whisk the powder with a little hot water or milk into a smooth paste before adding the rest of the liquid. It prevents lumps and blooms the color.

How much ube powder to use

Color you wantUbe powder per cup of batter
Light lavender1 tsp
Medium violet1 tbsp
Deep purple2–3 tbsp

Fresh ube to ube powder

Fresh ube (cooked & mashed)Ube powderLiquid to add
½ cup2 tbsp3 tbsp water or milk
1 cup¼ cup⅓ cup water or milk
2 cups½ cup⅔ cup water or milk

Keep the violet color bright

Ube’s natural pigments are pH-sensitive. Baking soda can turn ube bakes blue-green; use baking powder, or add ½ tsp cream of tartar per batch.

Pair it well

Unsweetened ube loves coconut milk, condensed milk, vanilla, white chocolate, matcha and a pinch of salt.

FAQ

Ube recipes: FAQ

What is the most popular ube recipe?

Ube halaya (ube jam) is the classic Filipino recipe. In the US, the ube latte is the most popular way to enjoy ube.

What does ube taste like in recipes?

Mildly sweet and creamy, with vanilla, coconut and nutty notes. It pairs especially well with coconut and white chocolate.

Can I use ube powder instead of fresh ube?

Yes. Use 2 tbsp ube powder plus 3 tbsp liquid for every ½ cup of cooked, mashed ube.

Why did my ube recipe turn green or blue?

Ube’s natural pigments react to alkaline ingredients such as baking soda. Use baking powder or add a little acid, like cream of tartar or lemon juice.

Do I need ube extract for these recipes?

No. All our recipes use pure ube powder, so the flavor and color come from real ube. The natural color is softer than dyed extracts.
