These ube brownies are fudgy in the middle with a shiny, crackly top. They are made blondie-style with white chocolate — no cocoa — so the ube flavor and violet color stay front and center.
Why white chocolate and ube?
White chocolate’s creamy vanilla sweetness is the perfect partner for ube’s nutty, coconut-like flavor. All the color comes from Kapsoo ube powder.
How to get fudgy ube brownies
Pull them from the oven when a toothpick still shows moist crumbs, and let them cool completely in the pan: they finish setting as they cool.
Instructions
Step 1
Preheat the oven to 350°F. Line an 8-inch square pan with parchment paper.
Step 2
Melt the butter with half of the white chocolate over low heat, stirring until smooth. Let it cool for 5 minutes.
Step 3
Whisk in the sugar, then the eggs one at a time, then the vanilla.
Step 4
Fold in the flour, ube powder and salt, then the remaining white chocolate.
Step 5
Spread in the pan and bake for 22–25 minutes, until the edges are set and a toothpick in the center comes out with moist crumbs.
Step 6
Cool completely in the pan before cutting into 16 squares.
Tips & variations
- Cool fully (or chill 30 minutes) for clean squares.
- Swirl 3 tbsp ube halaya over the batter before baking.
- Add a handful of chopped macadamia nuts for crunch.
