Ube cookies with ube powder (no halaya)
Many ube cookie recipes require ube halaya, which takes time to make. Here, Kapsoo ube powder goes straight into the dry ingredients, giving the dough real ube flavor and a natural violet crumb.
Why baking powder instead of baking soda?
Ube’s natural pigments are sensitive to pH. Baking soda makes dough alkaline and can turn ube blue-green. Baking powder and a pinch of cream of tartar keep the color violet.
Instructions
Step 1
In a bowl, whisk the flour, ube powder, baking powder, cream of tartar and salt.
Step 2
In a large bowl, beat the butter and sugar until light and fluffy, about 2 minutes. Beat in the egg, milk and vanilla.
Step 3
Add the dry ingredients and mix on low speed just until a soft dough forms. Cover and chill for 1 hour.
Step 4
Preheat the oven to 350°F and line two baking sheets with parchment paper.
Step 5
Scoop tablespoon-sized balls of dough, roll them in granulated sugar, then generously in powdered sugar.
Step 6
Bake for 10–12 minutes, until the edges are set and the tops crack. Cool for 5 minutes on the sheet, then move to a rack.
Tips & variations
- Deeper color: replace 1 more tablespoon of flour with ube powder.
- Add ½ cup white chocolate chips to the dough.
- The dough keeps for 3 days in the fridge — bake straight from cold.
Ube Crinkle Cookies: FAQ
Can you make ube cookies without ube halaya?

Why did my ube cookies turn green?
Baking soda makes the dough alkaline, which turns ube pigments blue-green. Use baking powder and a little cream of tartar.
Why chill the ube cookie dough?
Chilling firms the butter so the cookies spread less and get the classic crinkle top.
How long do ube crinkle cookies keep?
