These baked ube donuts need no fryer: the batter bakes in a donut pan in about 10 minutes, then each donut is dipped in a glossy ube glaze. Both are colored only with real ube.
How to make ube glaze
Whisk powdered sugar with Kapsoo ube powder and a little milk until thick but pourable. Natural ube gives a soft lavender glaze; add a little more powder for a deeper shade.
No donut pan?
Bake the batter in a greased muffin tin for 14–16 minutes and glaze the tops — you get ube donut muffins.
Instructions
Step 1
Preheat the oven to 350°F and grease a donut pan.
Step 2
Whisk the flour, ube powder, sugar, baking powder and salt in a bowl.
Step 3
In another bowl, whisk the milk, egg, melted butter and vanilla. Stir into the dry ingredients until just combined.
Step 4
Pipe or spoon the batter into the pan, filling each cavity about two-thirds full.
Step 5
Bake for 10–12 minutes, until the donuts spring back when touched. Cool for 5 minutes, then turn out onto a rack.
Step 6
For the glaze, whisk the powdered sugar, ube powder and milk until thick but pourable. Dip the tops of the cooled donuts and let set for 15 minutes.
Tips & variations
- Sprinkle toasted coconut on the glaze before it sets.
- No donut pan? Bake the batter in a muffin tin for 14–16 minutes.
