This ube matcha latte recipe gives you the café-favorite layered drink at home: a violet layer of ube milk, then a bright green layer of matcha. Ube is mellow and vanilla-like, and it softens the grassy edge of matcha — the two are a perfect match.
What is an ube matcha latte?
An ube matcha latte combines ube (purple yam) milk and whisked matcha green tea in one glass, usually iced so the layers stay separate. Because Kapsoo ube powder is 100% ube with no sugar, you control the sweetness.
How to get perfect layers
Put the sweetened ube paste at the bottom, add ice, then milk, and pour the matcha slowly over the back of a spoon. The sugar in the ube layer makes it heavier, so it stays at the bottom.

Instructions
Step 1
In a small bowl, whisk the ube powder with 2 tbsp hot water and half of the syrup until you have a smooth, lump-free paste.
Step 2
In a second bowl, whisk the matcha with the remaining 1 tbsp hot water (about 175°F) until frothy.
Step 3
Spoon the ube paste into the bottom of a tall glass and fill the glass with ice.
Step 4
Slowly pour in the milk, then gently pour the matcha over the back of a spoon to create a green top layer.
Step 5
Serve right away. Stir before drinking and add the rest of the syrup if you like it sweeter.
Tips & variations
- For a stronger ube flavor, use 1½ tbsp ube powder.
- Coconut milk brings out ube’s vanilla notes beautifully.
- Hot version: steam the milk with the ube paste, pour into a mug and top with the whisked matcha.
